Why is your Sushi rice too sticky??

Your sushi rice is usually too sticky because of one (or more) of these common mistakes:

1. Too much water

Rice absorbs excess water and becomes mushy/gluey.

Fix:
Use the right ratio:

  • 1 cup sushi rice : 1.1 to 1.2 cups water

(Depends on rice brand)


2. Not Rinsing the Rice Enough

Sushi rice has surface starch. If you skip rinsing, it turns gummy.

Fix:
Wash rice 3–5 times until water is mostly clear.


3. Overcooking

Cooking too long breaks grains and creates paste.

Fix:
Use a rice cooker or simmer gently, then rest covered 10 minutes.


4. Mixing Rice While Hot Too Aggressively

Stirring hard crushes grains.

Fix:
Use slicing motions with a rice paddle.


5. Too Much Vinegar Seasoning

Extra vinegar mix can make rice wet and sticky.

Fix:
Add gradually:

  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
    for 2 cups cooked rice

6. Wrong Rice Type

Long grain rice won’t work well. Some cheap rice becomes mushy.

Fix:
Use Japanese short-grain sushi rice.
